Broccoli And Apple Salad

Another “clean” recipe of mine, that is fast to make and very healthy. I know broccoli is not very exciting, although it should be, because it’s full of calcium and cancer-fighting nutrients. So I mixed up some spices and apple to make it more delicious and nutritious. This recipe is suitable for those who have various food intolerances, bodybuilders, GL watchers, calorie restriction diets, weight watchers, raw eaters (see below) and anyone who likes to combine different tastes in one dish. It contains calcium, omega oils, quercetin and other anti-inflammatory compounds and antioxidants. What more can you ask for? Add some lean protein to it and you have a perfect meal.

Serves two.

  1. 2 heads of broccoli
  2. 1 medium apple (any kind), unwaxed. Cored and diced. Don’t peel it.
  3. 1 red onion, peeled and diced
  4. 2 tbsp raw apple cider vinegar
  5. 1 tbsp agave nectar or honey if you can afford higher GL
  6. 4 tsp cold pressed flaxseed oil (I used orange flavoured)
  7. Juice of 1/2 medium orange
  8. 1/8 tsp each cinnamon and nutmeg

1. Wash and trim the broccoli, cut to florets and steam until just tender. If you don’t have a steamer, blanch it in boiling water for a minute. Cool under cold running water and set aside.

2. Combine all of the rest ingredients in a bowl, add the broccoli and mix well. That’s it!

Serve with lean protein, such as fish, tofu, chicken, turkey or eggs. If you skip blanching the broccoli and face it raw – you will have a raw meal, just add nuts and seeds for protein.
