Ok, here’s the thing: I try to cook something new every day. This is my challenge, it’s fun and I get to taste a lot of different dishes. Also it is a good way to increase the intake of vegetables and vary your diet. I have been doing this for a few years now and tried countless recipes and combinations.

On average, pretty much everything I make tastes nice *pats herself*. Things which taste amazing but remain healthy go to this blog. But there are other dishes, which are still good, but do not deserve the space here because they just doesn’t blow your mind (or palate) away. I have a few pictures of such dishes, so I thought I’ll post it here as a tribute to my discarded recipes.

This one looked soooo pretty! And it was extremely healthy too! No sugars, tiny bit of salt, veggies, herbs and legumes – what more do you need? I’ve made a nice vinaigrette with herbs for beans and corn, fried courgette lightly, put everything inside big tomatoes, dropped in some artichoke hearts and baked it. It looked nice and smelled nice, but came out a bit blunt. Maybe it needs more salt or more vinegar, or some sauce. I think as a main dish it’s not too good, but it can go well as an accompaniment to something else.

Now this one was actually good, but you see, because I do cook something new every day, I tend to forget details and measurements very fast unless I write it down right away. I’ve actually “lost” many good recipes because of my procrastination. So, the picture remains and you can see pretty much everything I’ve used here: courgette, red quinoa, chickpeas, parsley, spring onion…but I don’t remember the dressing and this is what’s really important. Yellow colour of courgettes gives away turmeric. Well, maybe I’ll dig out something similar from my cooking books and post it here. One day…maybe…

Ah, this is one of raw recipes I found on Rawmazing. Many such recipes include a large amount or fully consist of nuts. I like nuts and I’m not allergic, but there’s a limit in how much nuts I can take in one dish. These two little pyramids were made for two people. I ate one and almost felt sick it was so filling! I tasted good in the beginning, but half way through you start to really notice the taste of nuts and it just gets to be too much. Pity, it was so promising – healthy, raw starter, which looked good enough to serve at a party, but no. I don’t think I’ll be making it again.

These Angel cakes were nice, but they didn’t came out fluffy and puffy enough, they flattened as soon as I took them out of the oven. Also, I am always careful with sugars so I didn’t add much honey and they were not sweet enough. Otherwise, not too bad a dessert. I liked crystallised ginger on top.

Tha last one is just an image of Bok Choi – I thought it was pretty 🙂
